Infinity, the notion of endlessness and boundlessness represents spatial and temporal concepts of infinity that occur in physics when one asks if there are infinitely many stars or if the universe will last forever. Conceptualised by Culinary Director Richard Ekkebus, the presentation of Amber’s celebration cake is inspired by the beauty of Amber’s chandelier designed by Adam Tihany. The delicate cake features local Longan honey and enriched soy mousse, as well as Gianduja, yuzu ganache and a cocoa biscuit, the top is garnished with a yuzu gel. The cake is dairy free and gluten free.
